Catelli Gluten-Free Pasta & Chunky Black Bean Chili Mac Recipe {+ Giveaway}

I’m generally hesitant to try gluten-free replacements to regular food because generally eating a cardboard replica of any dish you love is terrible. With that said, I have been lucky to find some really amazing gluten-free options to replace my favourite carbs like pasta, breads, and doughs. When Catelli pasta announced the launch of a new product in their new gluten-free line I knew I had to try it.

I decided to try Catelli’s Gluten-Free Macaroni and made plans for a date night where I would make dinner while the lucky gentleman watched the hockey game. I rarely cook, and I even more rarely cook pasta dishes so I wanted to go for something much different than a standard pasta and tomato sauce dish. I used the recipes posted on Catelli’s website to prepare Chunky Black Bean Chili Mac (recipe below) which only took about 30 minutes to prepare (and even less time to eat)!

Catelli’s Macaroni (as well as their gluten-free Penne, Fusilli, and Spaghetti) is made from a blend of white rice, brown rice, corn, and quinoa. It was not only delicious in taste and texture, but also really easy to cook. Catelli gluten-free pasta is certified gluten-free since it is produced in a dedicated gluten free facility. Most gluten-free products do not fare well as leftovers but my dish tasted just as delicious the next day (and the day after…sssshhhh!). In the Black Bean Chili Mac I added extra jalapenos for some extra pep and a lot of extra cheese. I also only used a few spoonfuls of macaroni pasta in each serving so that the dish was mostly the meat and bean blend.

Catelli Gluten-Free Chunky Black Bean Chili Macaroni Recipe

What You Need to Buy:

1 pkg (340 g) Catelli® Gluten Free Macaroni (available at most grocery stores – printable coupon here)
1/2 lb (250 g) extra lean ground beef
1 each onion, orange pepper and large jalapeno, chopped
1 tbsp (15 mL) each minced garlic and chili powder
1 tsp (5 mL) each ground cumin and dried oregano
1/2 tsp (2 mL) each salt and pepper
1 can (796 mL) diced tomatoes
1 cup (250 mL) each corn kernels and black beans (drained and rinsed)
Sour cream and shredded Cheddar cheese (optional)

What You Need to Do: 

  • Brown beef with onion, chopped peppers, garlic, chili powder, cumin, oregano, salt and pepper in a large, nonstick skillet set over medium heat.
  • Stir in tomatoes, black beans and corn. Simmer, partially covered and stirring occasionally, for 20 minutes.
  • Meanwhile, cook macaroni according to package directions. Spoon chili over macaroni and garnish with sour cream and cheese (if using).

    I would make so much! I would make mac & cheese, home made beef-a-roni, use noodles in chili, and in soups… with 5 kids, i go through a lot of pasta, so this would be awesome. thanks for the chance.
